We purchase local and/or organic food when possible.
We have a 'demonstration' heirloom vegetable garden. In our first year tomatoes, peppers, okra (pictured right), cilantro, parsley, potatoes, peas and beans were used in our kitchen.
Our first popcorn harvest grown in our heirloom garden was popped as a refreshment for The Gleaners and I movie night!
We have an herb garden oustide the kitchen to provide the chef's with fresh herbs.
We serve Fair Trade coffees and teas in our dining room, conference rooms and in Sr. Catherine's Coffee Corner.
We are a member of CT NOFA and are working with the CT Department of Agriculture to try and increase our purchasing of local, sustainable and/or organically grown/raised foods.
